This recipe combines the joy of snacking with the benefits of high-quality protein. Enjoy this cake as a snack or after a workout to support your muscles.

Ingredients:

For the cake:

  • 1 cup oat flour (ground oat flakes)
  • 1/2 cup protein powder Athletic Supplements Vegan Protein
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup coconut oil (melted)
  • 1/4 cup maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 1 cup unsweetened almond milk (or other plant-based milk)
  • 1/2 cup unsweetened applesauce

For the topping:

  • 1/4 cup ground nuts (almonds, walnuts, or your choice)
  • 1/4 cup dark chocolate chips (optional)
  • Fresh berries or fruits of your choice for decoration

Directions:

  1. Preheat the oven to 180 degrees Celsius. Lightly grease a cake tin (diameter 20 cm) or line it with baking paper.

  2. In a large bowl, combine the oat flour, protein powder, baking powder and a pinch of salt.

  3. In a separate bowl, mix the melted coconut oil, maple syrup (or agave syrup), vanilla extract, almond milk and applesauce until well combined.

  4. Add the liquid ingredients to the flour mixture and mix thoroughly until a uniform dough forms.

  5. Pour the batter into the prepared cake pan and smooth it out.

  6. Sprinkle the ground nuts and (if desired) the dark chocolate chips evenly over the dough.

  7. Place the cake in the preheated oven and bake for about 25-30 minutes, or until a toothpick comes out clean when inserted into the center of the cake.

  8. Remove the cake from the oven and let it cool completely on a wire rack.

  9. Once cooled, decorate with fresh berries or fruits of your choice.
