Here is a simple recipe for protein pancakes that are not only delicious, but also provide a good portion of protein. Ingredients:

  • 1 cup oatmeal
  • 1 scoop (approx. 30g) Athletic Supplements protein powder
  • 1 ripe banana
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon honey or maple syrup (optional)
  • 1/2 cup almond milk (or milk of choice)
  • 1 egg
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Cooking spray or coconut oil for frying

Preparation:

  • Place the oats in your blender or food processor and pulse until they form a fine flour.

  • Add the Athletic Supplements Protein Powder , ripe banana, baking soda, cinnamon, honey or maple syrup, almond milk, egg, vanilla extract and a pinch of salt. Mix everything until a smooth dough forms.

  • Preheat a skillet or nonstick pancake pan over medium-high heat and spray lightly with cooking spray or use coconut oil to prevent sticking.

  • Pour about 1/4 cup batter into the pan to form a pancake. Bake the pancake in the pan until bubbles form on the surface (about 2-3 minutes).

  • Now turn the pancake carefully and fry it on the other side for another 2-3 minutes until it is golden brown.

  • Repeat this process until the dough is used up, adding more cooking spray or coconut oil if necessary.

  • Serve the protein pancakes warm with your favorite toppings, such as fresh fruit, yogurt, nuts or maple syrup.
