Protein-rich quinoa bowl

Ingredients:

  • 1 cup quinoa
  • 2 cups of water
  • 1 cup steamed broccoli
  • 1 cup roasted chicken breast cubes (alternatively: tofu or tempeh for a vegan option)
  • 1 cup roasted cauliflower
  • 1/2 cup diced avocado
  • 1/4 cup roasted chickpeas
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Preparation:

  1. Rinse the quinoa thoroughly and bring it to the boil in a pot with 2 cups of water. Then reduce the heat, cover and simmer until the liquid is absorbed and the quinoa is tender, about 15 minutes.

  2. While the quinoa is cooking, toss the broccoli, roasted chicken breast cubes (or the vegan alternative), roasted cauliflower with a little olive oil, salt and pepper and roast in the oven at 200 degrees Celsius until golden brown and crispy.

  3. Roast the roasted chickpeas separately with spices of your choice until crispy.

  4. In a large bowl, combine the cooked quinoa, roasted vegetables, avocado and chickpeas or serve as desired.

  5. For the dressing: In a small bowl, combine the juice of half a lemon, 1 tablespoon olive oil, salt and pepper. Pour the dressing over the quinoa bowl and mix well.

  6. Sprinkle with chopped parsley and serve.
